new world cuisine
Sazón is a fine dining restaurant with an award-winning wine list and one of the country’s largest tequila and mezcal selections. It continues to be recognized for outstanding service, extraordinary ambience, and a creative menu. Inhabiting a historic building in the heart of Santa Fe’s downtown Plaza area, it is ranked #2 in the U.S. for fine dining by Trip Advisor! Sazon also has earned AAA’s prestigious 4 Diamond award and was named sixth in the U.S. for fine dining by Forbes magazine. Chef Olea is honored to have won the prestigious 2022 James Beard “Best Chef of the Southwest” Award.
Originally from Mexico City, Chef Fernando Olea, formerly Chef/Owner of Epazote Restaurant and Bert’s La Taqueria, has been enthralling diners in Santa Fe since 1991. His menu is deliberately small, features fresh and locally sourced produce and meats when possible, and incorporates ingredients from around the world.
Chef Olea is renowned for his exquisite moles, a sauce of complex flavors that usually includes toasted and ground spices, seeds, nuts, chocolate and chile. Many mole recipes contain more than thirty ingredients and some recipes have five varieties of chile alone. Chef Olea invites you to experience his New World cuisine at Sazón.
