Nestled in the heart of downtown, this beloved restaurant carries a rich legacy built by former owners Glenda Griswold and Catherine O'Brien. Known for its warm hospitality, thoughtfully crafted dishes, inviting atmosphere, and wine, the restaurant became a local favorite under their leadership. Glenda and Catherine brought a unique blend of culinary passion and community spirit that helped shape the restaurant's enduring reputation. Today, Chef Jose Rodriguez continues that tradition, honoring their original vision while introducing higher upscale ingredients and flavors to a new generation at Terracotta Wine Bistro.

Chef Rodriguez was born and raised in the historic heart of Zacatecas, Mexico-a city known for its rich culture, colorful traditions, and cuisine. Growing up in a poverty household, Chef Jose's earliest memories are filled with the aroma of simmering chilies, fresh corn tortillas, and the sound of laughter echoing through the cobbled streets during the neighborhood meals. 

As a child, he learned to cook beside his Abuela, and mama in a small, rustic kitchen with limited tools, and ingredients. Money was scarce, but love and flavor were abundant. From a young age, he understood the power of food- not just to nourish, but to connect people, tell stories, and preserve heritage. Today, Chef Jose is celebrated for his ability to introduce his own global infused cuisine after the upbeat struggles of his journey.  His cuisine is a tribute to where he comes from: soulful, honest, and fiercely proud.
